BRACE thinks of its wine list as a perfect combination of classic and modern, a mixture of tradition and innovation, some familiarity with room for new discoveries.

Innovation is, very often, nothing more than a conscious return to ancient and primordial methods of the past, made available today even in small geographical areas.

We wanted to aim for that union!

We have achieved this by including great classic wines, without however neglecting those small wine producers, who have devoted their profession towards traditional or biodynamic methods, thus respecting their grapes and their territory.

Two apparently distant worlds inseparably embrace each other, creating a collection of wines that reflects our vision and our daily mission: to become the spokesperson for an ethically sustainable gastronomic way in all its parts.

A return to the past with our feet in the future!

BRACE RESTAURANT is winner of the gold star in the category best medium sized list at the 2021 star wine list of the year Denmark.


They are not just simple juices!

The first sustainable concept to which we linked ourselves, since the opening of BRACE in 2017, was to try to minimize waste in the kitchen, and beyond.

Any banal waste of fruit, vegetables and herbs, but also the atypical use of leftover coffee grounds, can find new life before being thrown away.

From this act of faith, our healthy habit is born, at every single change of season and therefore also of the menu, of creating, experimenting and testing a non-alcoholic combination that can excite the palate of our guests, enhancing every taste.

It is made up of infusions, juices and fermentations!
