It’s time for our second Meetings of Minds event! This time, Nicola will be joined in the Brace kitchen by Nicolas Min Jørgensen, who is the head chef at the Michelin-starred Restaurant Substans in Aarhus.

Nicolas and Nicola will collaborate to prepare a menu exclusively for the evening, that is roughly the same length as the usual tasting menu at Brace.

Fulvio Bressan, with his wife Jelena run the winery located in Farra d´Isonzo, Gorizia (Friuli, Italy) following viticulture practices that respect the nature and terroir. As a result, bringing accurate wines which perfectly reflect the area from which they come. Working with local grapes such as Friulano, Malvasia, Ribolla Gialla, Schioppettino, Pignol etc.

The Bressan family continues to interpret wine as the fruit of scrupulous traditions of master wine-makers who knowingly unite the ancient science of oenology with methods that pre-date modern technology, respecting a very long tradition that categorically refuses a style of modernity that renders everything indistinguishable

An evening of wines from ARPEPE at BRACE

Join us on Wednesday 28th March for an evening of wines from ARPEPE, presented by Stefan from Terroiristen Vinbar og -Butik.

The Perego family make wine in the mountainous Valtellina, so far north in the Italian alps, it’s practically Switzerland. They work with Nebbiolo grapes (or “Chiavennesca as it is called in this region) up to 700m above sea level, south-facing absorbing all the sunlight. The vines dig into the sheer granite rock, which results in a very mineral wine.

A MEETING OF MINDS: AGA X BRACE

We’re very excited to introduce the first in our event series: A meeting of minds. This time, in celebration of Brace’s one year anniversary!

On Wednesday 31st January, Nicola will be joined in the Brace kitchen by Oliver Piras – an old friend from the Noma days, who now heads up the Michelin-starred AGA restaurant in the Dolomites mountains with his partner, Alessandra Del Favero.

He is visiting Copenhagen in January to pop-up in the Brace kitchen. Together, he and Nicola will spend several days touring local farms and forests, and based on the ingredients they find, each will create 2 snacks and 3 courses, especially for this event. It will be a meeting of Northern Italian mountain cuisine and a Nordic touch.
